Protein-Packed Pumpkin Pancakes

Ingredients (makes 1 serving)
1/3 cup flour
1 scoop vanilla protein powder
3/4 tsp. baking powder
pinch of salt
1/4 tsp. pumpkin spice (or cinnamon)
3 tbsp. liquid egg whites
1/4 cup canned pumpkin puree
2 tbsp. unsweetened almond milk
1 tbsp. dark chocolate chips (optional)
Instructions
Pre-heat pan or griddle to medium/high heat.
In a bowl, mix dry ingredients.
In a separate bowl, mix egg whites, pumpkin, milk and vanilla extract.
Mix wet and dry ingredients and stir until a thick batter is formed. Fold in chocolate chips
Spray pan/griddle with non stick spray. Spoon batter onto griddle to make 2-3 large or 4-5 medium pancakes
