Protein-Packed Pumpkin Pancakes

Ingredients (makes 1 serving)

  • 1/3 cup flour

  • 1 scoop vanilla protein powder

  • 3/4 tsp. baking powder

  • pinch of salt

  • 1/4 tsp. pumpkin spice (or cinnamon)

  • 3 tbsp. liquid egg whites

  • 1/4 cup canned pumpkin puree

  • 2 tbsp. unsweetened almond milk

  • 1 tbsp. dark chocolate chips (optional)

Instructions

  • Pre-heat pan or griddle to medium/high heat.

  • In a bowl, mix dry ingredients.

  • In a separate bowl, mix egg whites, pumpkin, milk and vanilla extract.

  • Mix wet and dry ingredients and stir until a thick batter is formed. Fold in chocolate chips

  • Spray pan/griddle with non stick spray. Spoon batter onto griddle to make 2-3 large or 4-5 medium pancakes

Macros: 350 calories, 30 grams protein, 45 grams carbs, 7 grams fat
