Healthy Christmas Morning

One of my favorite Christmas traditions is breakfast! We love running downstairs to see what Santa has brought, unwrapping all the presents under the tree, and then having a delicious breakfast. Whether you are the sweet or savory sort, we’ve got you covered- even on Christmas Day! Below are two breakfast casserole recipes that are packed with protein. Serve these up with some orange juice, bacon or sausage, and a fruit salad and we don’t think your family will even notice that you’ve made them a healthy, protein-packed Christmas breakfast.

Sweet - French Toast Casserole (adapted from Lauren’s Macro Meals)

SERVES 8

INGREDIENTS

  • 2 cups nonfat Fairlife Milk protein milk

  • ¾ cup fat-free half & half

  • 10 egg whites

  • ⅓ cup Truvia or another preferred sweetener

  • 1 teaspoon vanilla extract

  • 1 teaspoon cinnamon

  • ½ teaspoon nutmeg

  • ½ teaspoon salt

  • 2 scoops 1st Phorm Cinnamon Cookie Batter protein powder (or any protein powder to your liking)

  • 14 oz bread, cut into cubes

Optional Topping:

  • 2 tablespoons butter

  • 2 tablespoons Truvia

  • ¼ teaspoon cinnamon

  • Powdered sugar for garnish

Instructions

  1. Preheat oven to 350 degrees. Spray a 9x13 dish (glass preferred) with nonstick cooking spray and set aside.

  2. Blend milk, half & half, egg whites, Truvia, vanilla, cinnamon, nutmeg, salt and protein powder until smooth.

  3. Add bread cubes into a large bowl and pour milk and egg mixture over top. Stir to coat all the bread in the egg mixture. Pour entire contents into prepared baking pan.

  4. For the optional topping: dot the top with butter. Stir Truvia and cinnamon together and sprinkle over top of the french toast casserole. Bake 45-50 minutes or until set, golden and puffed.

  5. Top with powdered sugar (if desired) and cut into 8 large pieces.

  6. Serve warm with syrup or fresh fruit.

Approximate protein macros: 19 grams per serving

Savory - Crustless Broccoli Quiche (adapted from Skinny Taste)

INGREDIENTS

  • cooking spray

  • 3 cups chopped broccoli florets

  • 1 cup grated cheddar cheese

  • 2/3 cup Fairlife milk

  • 1/4 cup fat-free half & half

  • 5 large eggs (or replace 2 eggs with 1/2 cup egg whites for more protein and less fat)

  • 3/4 teaspoon kosher salt

  • 1/8 teaspoon ground black pepper

  • pinch freshly grated nutmeg

INSTRUCTIONS

  1. Preheat your oven to 350 degrees. Spray a pie dish with oil.

  2. Steam the chopped broccoli florets in the microwave with 1 tablespoon water until tender-crisp and green but not mushy, about 2 1/2 to 3 minutes.

  3. Evenly spread the broccoli in the dish and top it evenly with the grated cheddar cheese.

  4. Make the custard mixture by whisking together the milk, half and half, eggs, salt, black pepper, and the nutmeg. Pour the custard into the dish and bake 35 to 40 minutes, until the center is set.

  5. Cut the quiche into 6 pieces and serve.

Approximate protein macros: 12 to 15 grams, depending on whether egg whites are used.
